1. Mix together flour, baking powder, baking soda, salt, and lemon zest in bowl.
2. In another bowl, whisk together milk, melted butter, egg yolk until smooth
3. Make a well in the dry ingredients and gradually stir in the wet until combined.
4. Do not continue to stir. Cover in plastic wrap. Let stand for 30 minutes. Preheat waffle iron.
5. In clean bowl, whisk the egg whites until fluffy. Gradually add icing sugar while continuing to beat until whites hold peaks. Then add honey and gradually fold into batter.
Ladle batter into waffle iron and cook.

These waffles are delicious. They especially taste delicious with the mint tea.
