Drama Inspired Recipe: Green Chicken Curry

In the drama You’re My Destiny (2017), Ampha, Wanida’s sister, goes over to her mom’s house. She sees that they’re eating green beef curry, her current craving, and so she sits down and joins the mom and sister. Once I saw this scene I instantly knew instantly that I will be making it since I have green curry in my fridge. I change the beef to chicken to make green chicken curry instead for various reasons. The main reason is that I found a chicken recipe in a cookbook. Secondly my family tries to limit our red meat intake.

Green Curry is also know as Gaeng kheow wan gai and it is one of the well-known Thai dishes to western countries. After cooking and eating it, I can understand why it would be. It is so delicious.


Ingredients

The ingredients were relatively easy for me to find. It’s a 10 minute walk to the nearest Asian market and I already had many of the ingredients on hand: the curry, garlic, fish sauce. The search for ingredients wasn’t difficult for me. I did get confused because the list in the book asked for coriander leaves. I was searching for them until I remember that coriander = cilantro. Sometimes it can get confusing when foods have more than one name. The original recipe did asked for pea aubergines and keffir leaves. I decided that I would just used peas for my recipe. I think next time I will try the recipe with the pea aubergines and keffir leaves.


Cooking Process

The cooking process was somewhat overwhelming. At the time of cooking this, I was making Lemongrass Ginger Ale (a none drama inspired recipe) and Bua Loy, which is the confection that Wanida craved on her birthday. In hindsight, I probably should have just prep in advance and them cooked everything. I also ended up forgetting to make the plain rice to go with the curry.

Besides the prep and chopping everything up, this recipe is relatively simple to make. It doesn’t require to much hands on work. I’ve made recipe with Lemongrass before, but I never really thought about the proper way to cut lemongrass. Since I am a visual person, I watched this Youtube video:

Green Chicken Curry

Ingredients

  • 450 g 1 lb boneless, skinless chicken things
  • 2 fresh lemon grass stalks
  • 1 1/2 tablespoons olive oil
  • 2-3 tablespoons Thai green curry paste
  • 3 tablespoons finely sliced shallots
  • 3 tablespoons coarsely chopped fresh ginger
  • 2 teaspoons shredded lime zest
  • 1 tablespoon fish sauce
  • 2 teaspoons sugar
  • 1 teaspoon salt
  • 225 g 8 oz frozen peas
  • 1 400 ml 14 fl oz can of coconut milk
  • 3 tablespoons water
  • a small handful of fresh cilantro
  • a large handful of fresh Thai basil or regular basil

Instructions

  • Cut chicken into 2.5 cm (1 in) chunks.
  • Peel off the tough outer layers of lemongrass, leaving the tender whitish center, and chop finely.
  • Heat a wok or large frying pan until very hot. Add oil. Add green curry paste and stir-fry for 2 minutes. Then add chicken. Mix until coated with curry.
  • Add lemongrass, shallots, ginger, lime zest, fish sauce, sugar, and salt. Stir-fry for another minute.
  • Add peas and pour coconut milk and water. Heat to boil and then turn low to simmer for 15 minutes or until chicken is cooked through (165 Fahrenheit or 75 Celsius). Serve with plain rice.

Notes

I got this recipe from the cookbook Simple Thai Cookery by Ken Hom. The majority of the recipe is similar except I used peas instead of pea aubergines (which at the time I didn't realized they were two different things.
 

Afterthoughts

Green chicken curry is so delicious. I love it and I would probably cook it regularly. The sauce that the chicken was cooked in was good, but the chicken was amazing. It absorbed all the flavors of the stew.
