Book Inspired Recipe: Spaghetti All’Amatriciana recipe

In the books or manga I sometimes discover foods that I have never eaten before. In Good Morning Call, I had created a long list of these foods. The one that I really wanted to try was pasta with amatriciana. My family is a strange American family that doesn’t eat very much pasta. We now only eat 3 dishes: spaghetti with marinara, linguine alla vodka, and now spaghetti all’amatriciana. This recipe is very delicious and easy to make (less than 30 minutes).

Abe and Ota are well knowledgeable in the realm of Italian food.

The Decision

The picture above wasn’t the only mention of Italian dishes in the manga. After researching all of them, pasta all’ amatriciana was the only one that look the most appetizing. I had never heard of it before and I was curious about it. I even consulted my husband on his thoughts since he doesn’t care much for pasta.



The Changes

This recipes is not the original Amatriciana sauce. The original recipe has guanciale (cured pork cheek) which I 1. couldn’t find it at the store 2. couldn’t bring myself to eat it (mmm…maybe next time). The original also include dry white wine. These two items I decided to switch for items that I already had: bacon and chicken broth. Maybe next time, I go to an Italian restaurant (that might in forever though), I will choose this pasta in order to find out how it really is suppose to taste.

Spaghetti All'Amatriciana

Ingredients

  • 1 Tbs olive oil
  • 6 slices bacon
  • pinch red pepper flakes
  • 1/4 C chicken stock
  • 1 can 15 oz whole peeled tomatoes (preferably San Marzano)
  • salt and pepper
  • 1 pkg spaghetti
  • parmesan cheese

Instructions

  • 1. Cook spaghetti in boiling salt water and follow the directions on the package.
  • 2. In large skillet heat olive oil over medium heat. Cook bacon. Once bacon is done, take it out to cool and then crumble into smaller pieces.
  • 3. Return it to the pan, add the red pepper flakes and chicken stock and cook until liquid is nearly evaporated, for about 3 minutes.
  • 4. Add tomatoes and bring to a simmer. Season with salt and pepper.
  • 5. Reserve 1/4 C of pasta water and drain the rest. Add the pasta and the liquid to the sauce. Cook over high heat, stirring rapidly and until sauce has thickened.
  • 5. Serve and sprinkle with cheese.

After Thought

Oiishi! It is so yummy! The recipe is quick and simple, but still fulfilling.
