Book Inspired Recipe: Iced Mint Tea and Lemon Honey Waffles

In the Manga Good Morning Call, the main character, Nao, imagines herself working at a cute cafe selling cute menu items. Iced mint tea and Lemon honey waffles were the what she imagined serving to customers. It sounds delicious. I wanted to try it. And so I did.

The Lemon Waffles

The ingredients for waffles is something I always have the ingredients for, but do I ever cook them…hardly. I typically make basic waffles without any special ingredients, so this recipe was something new for me. The original recipe comes from food.com. I only changed one thing which is add honey. It tastes so yummy. I would probably add more lemon zest because it tastes so good.

Lemon Honey Waffles

Course Bon Apetit

Ingredients

  • 1 3/4 C all purpose flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 lemon zest grated
  • 1 3/4 C milk room temperature
  • 1/4 C melted butter
  • 3 eggs separated, room temperature
  • 1 tbs honey
  • 1 tbs icing sugar

Instructions

  • 1. Mix together flour, baking powder, baking soda, salt, and lemon zest in bowl.
  • 2. In another bowl, whisk together milk, melted butter, egg yolk until smooth
  • 3. Make a well in the dry ingredients and gradually stir in the wet until combined.
  • 4. Do not continue to stir. Cover in plastic wrap. Let stand for 30 minutes. Preheat waffle iron.
  • 5. In clean bowl, whisk the egg whites until fluffy. Gradually add icing sugar while continuing to beat until whites hold peaks. Then add honey and gradually fold into batter.
  • Ladle batter into waffle iron and cook.

Notes

These waffles are delicious. They especially taste delicious with the mint tea.

One things about waffles, is that the waffle maker will only make one at a time and that means that making them take a while.

Iced Mint Tea

Making this tea was a little more interactive and fun than the waffles. First I went to the asian market to look at what varieties of green tea they had. I found a Japanese flavor green tea (I’m not quite sure what that means)..But if you can’t find it, I found some online. I also have mint growing in my yard, so I went to forage it. So much fun. I had my kids help me pick it too. It’s a quick and delicious tea to make. Since it’s iced, it’s more enjoyable in hot weather.

It such a yummy combination. If you don’t try them together at least make one of them and let me know what you think. Both of the recipes use lemon and honey. I use the left over lemon from the waffles to add to the tea.
